The passion was always there. Knowledge and inspiration came from his studies and internships. Then, together with the desire to build something new in the Wachau, it all became the perfect mix to found Simon Gattinger Winery in 2017. 2023 saw the reconstruction of the historic cellar into a modern facility in three levels, designed to utilize the force of gravity alone to bring the must into the cellar. Some call it sustainable. Simon believes that one should simply utilize the knowledge of generations to make wine with a future. Clear and precise. Just as Simon sees the Wachau.
