Harvest Notes
The grapes were selectively harvested by hand in mid-September.
Vinification
They Grapes go straight to the press without any detours. A gentle filling process ensures that the juice, which is released by the grapes' own weight, produces a white Merlot. The must was slowly fermented in chilled stainless steel tanks and then matured on the fine lees until bottling in spring.
Food Pairing
A fine pairing with Mediterranean and Asian-inspired dishes or simply to enjoy, a little bold but after some maturing time with light blue cheeses.
