Harvest Notes
Only healthy grapes are harvested by hand at the end of October after several harvests.
Vinification
The grapes are destemmed, cold macerated and then fermented in open fermentation vats for almost four weeks. The mash is first immersed by hand three times a day, then twice a day, in order to obtain maximum fruit and fine tannins. The wine is then matured for three years in small French oak barrels before being bottled.
Food Pairing
Goes well with lamb, wild fowl, "Boeuf Bourguignon", steak with mushrooms, goose, duck, smoked meats with bacon, etc.
