Vinification
The harvest is made by hand. After destemming and skin contact for around 8 hours, pressing is done by pneumatic press. The juice can settle then for about 12 hours, only the clear juice is used for fermentation with only natural yeast in temperature controlled stainless steel tanks.

Riesling is the ideal companion for eating. Whether for starters, spicy Thai dishes or even cooking from Mexico and the Middle East, the Riesling can be combined with all these different dishes.
