Description
Traditional “field blend” from up to 60 years old ivines in Kirchberg-vineyard which is located at 400m above sea level between the castle ruin and the church of Falkenstein. A steeper limestone rock with humus topsoil. The southeast orientation prevents overheating in the afternoon. The windy layer protects against unwanted botrytis (noble rot). After harvesting at the end of October there is a skin contact for approx. 24 hours, followed by soft pressing. When fermentation is starting we put it in 1500-liter-oak-barrels and there it matures on the lees for around 10 months. Complex aromas of exotic fruits, roses and white fruits go along with decent herbal notes. Full-bodied on the palate, roasted almonds, lots of spiciness, expressive and animating with salty mineralogy in the long finish. Outstanding aging-potential.
fermentation in large oak barrels (500 liters).
