Destemmed with care, spontaneous alcoholic and malolactic fermentation initiated by vineyard-own yeast. 12 months on the yeast in large oak, chestnut and acacia barrels and 7 months on the fine lees in steel barrels. Bottled unclarified and unfiltered in April 2023, followed by an evolution within the bottle.
