Harvest and grape selection by hand. Slow and gentle pressing using a tank press. 12h débourbage (pre-clarification), spontaneous fermentation in large, traditional oak barrels (600-2400lt). Maturation between a minimum of 12 and a maximum of 36 months on the lees, depending on the barrel, 1st racking and cuvetting of the barrels after 36 months in steel tanks, taking into account favourable moon phases. At the appropriate time, the wine is clarified using small quantities of bentonite and preserved with a small dose of sulphur. After a further month of ageing in steel tanks on the fine lees, this wine was bottled unfiltered in April 2024.
