Slow and gentle pressing using a tank press. 12h débourbage (pre-clarification), spontaneous fermentation in large, traditional oak barrels (600lt). Maturation for 12 months on the lees, followed by first racking and cuvetting of the barrels in steel tanks, taking into account favourable moon phases. At the appropriate time, the wine is clarified using small quantities of bentonite and preserved with a small dose of sulphur. After a further 19 months of ageing in steel tanks on the fine lees, this wine was bottled unfiltered in Februar 2023. After further bottle ageing, the wine will be released for the first time in September 2024.
