Vinification
Maceration time 12-24 hours. Slow and gentle pressing with a tank press. 12h débourbage (pre-clarification), spontaneous fermentation in large neutral oak barrels (1200-2400lt). Maturation for 12 to 24 months on the lees, depending on the barrel, 1st racking in steel tanks, taking into account the favourable phases of the moon. At the appropriate time, the wine is clarified with small quantities of bentonite and preserved with a small dose of sulphur. After further ageing in steel tanks, this wine was bottled unfiltered in April 2024.
