Vinification
Harvest and grape selection by hand; maceration time between 12 and 48 hours; gentle pressing; spontaneous fermentation in stainless steel tanks; then first racking and cuvetting of the batches in steel tanks, taking into account favourable moon phases. Maturation on the fine lees for a further 12 months in stainless steel tanks. At the appropriate time, the wine is clarified using small quantities of bentonite and preserved with a small dose of sulphur. After a further 2nd racking, this wine was bottled unfiltered in February 2024.
