Harvest in the middle of October, 14 days of maceration, controlled fermentation at 28-32°C in stainless steel tanks, after pressing approx. 12 months storage in french Allier-oak barrels (35% new).
Food Pairing
Goes well with roast lamb or beef. Harmonizes also with fried, stuffed game dishes.
