Harvest Notes
- hand harvested - 100% destemming then crush - 4 to 5 weeks maceration in 500 l containers, - punched down 3 times daily by hand - ight pressing - overnight sedimentation and racked into used and new oak barrels
Vinification
- fermentation in 500l container - 1-2 years storage in new and used french oak barrels - assemblage in stainless steel tanks
