Harvest Notes
Through biodynamic cultivation and extensive manual work on the steep slope, we were able to calm the vines during turbulent phases of vegetation. The balancing act between immaturity and overripeness demanded our special sensitivity in autumn. Selection of Burgundy grapes, hand-picked, in small boxes.
Vinification
Spontaneous fermentation and aging on the yeast in small wooden barrels, sometimes also in Pfarrweingarten vineyard barrels, ds. Barrels from the oak trees of this vineyard.
