Picked and selected by hand in September 2017. In the cellar berries went through optic selecting machine
Vinification
Fermentation on the skins in order to extract the red colour and the tannins of the grapes. After three weeks the young wine is moved to barrique barrels where malolactic fermentation takes place. The wine ages for 24 months in small oak barrels in order to obtain maturity and stability before bottling. Wine is matured in a bottle for another 2 years in order to harmonize and reach perfect maturity
