Harvest Notes
The Welschriesling grapes were harvested by hand and selected directly during the harvest.
Vinification
The grapes were destemmed and lightly crushed with the feet; 1 day of maceration. Fermentation took place spontaneously and uncooled. The Welschriesling matured on the fine lees for 6 months. Only minimal sulphur was added during vinification. The Welschriesling OSTRICH was bottled unfiltered.
