Description
The name of the Rotgipfler grape variety is related to the fact that the leaves of the young shoots as well as the shoot tips and leaf veins have a reddish color. It is very rare today and can only be found in the Thermenregion, south of Vienna and there it is also Part of the DAC System. A bright straw yellow in the glass. A fine bouquet of fruit aromas: ripe yellow apples, juicy pears and fresh pineapple, followed by spicy components such as fresh brioche and green hazelnuts. Elegant, playful and easy to drink on the palate with fresh, balanced acidity. The inviting fruit aromas promised on the nose are complemented by orange zest and tangerines on the palate, and in the long finish there is also some vanilla and white pepper.

Harvest Notes
Selective hand-picking at the 15th and 23rd of September 2023, during a stable and warm weather.
Vinification
Selective hand-picking, destemed and crushed, 6 to 12 h mash time in the closed tank press. Strained and pressed must fermented together, partly spontaneous fermentation with natural yeasts, fermentation duration 21 days. 2/3 matured in steel tanks and 1/3 in large wooden barrels.
Food Pairing
Excellent accompaniment to all dishes with a certain intense spice and spiciness (Asian, Oriental, Mediterranean - don't be afraid of curry, chili, lemongrass or ginger). It confidently counteracts the creamy texture of hollandaise and béchamel with white meat, firm fish, poultry, even with that. It cuts a fine figure with Zürich Geschnetzeltes. It compliments aged cheese, fig mustard and roasted nuts. A little hint; Baked Camembert with honey, garlic and rosemary with fresh baguette and salted butter.
