Description
Our top Pinot Noir is a delicate rubygarnet red with a fine water rim and light ruby tones at the end of the core. The “Graf Weingartl” brings pure Burgundy to the nose, subtle raspberries with wild strawberries, delicately backed by smoky aromas. On the palate it delivers what is promised, the berries continue. They are accompanied by a balanced acidity, which is cushioned ever so slightly by the sweetness of the extract. It needs some oxygen to develop its full grace. On the palate, the delicate tobacco aromas and finely structured tannins are just right to create complexity. A big and long finish leaves a lasting impression.

Vinification
Selective hand-picking on October 5th and 9th, 55% destemed and crushed, 30% whole berries, 15% whole bunches with combs, 4 days cold maceration at 11 °C, spontaneous fermentation with natural yeasts, pressed 10 days after the start of fermentation, 100% barrique aging , 50% new barrels, the rest used barrels second and third occupancies. Aged in barrels for 16 months.
Food Pairing
Braised beef cheeks with rolled dumplings, lamb crown with cabbage sprouts. Roasted veal liver with polenta or pumpkin gnocchi with Gorgonzola find a worthy companion.
