Description
Our single-vineyard Pinot Noir is a delicate garnet red with a fine water edge and a dark core. The “Graf Weingartl” brings pure Burgundy to the nose, subtle raspberries with cherry fruit and the scent of violets, delicately backed by smoky aromas that are not solely due to the wood aging. On the palate it delivers what is promised in the scent, the berries continue. They are accompanied by a balanced acidity that gives the elegant tannins a complex framework. Nevertheless, you need time here, youthfull as he is. And patience the delicate tobacco aromas emerge on the palate, just right to create complexity. We love the long finish of this silky, elegant wine.

Vinification
Selective hand picking on September 17th and 23rd, 65% destemmed, 35% whole bunches with combs, 8 days cold maceration at 13 °C, spontaneous fermentation with natural yeasts, pressed 21 days after the start of fermentation, 100% barrique aging, 30% new barrels, remainder used barrels second and third occupancies. Aged in barrels for 17 months.
Food Pairing
Pairs well with roast beef, green bacon beans and potato gratin, catfish fillet with grilled asparagus or veal loin with dark jus, porcini mushrooms and cabbage sprouts or with pumpkin gratin with sheep's cheese and roasted pumpkin seeds.
