Vinification
Vinification: Early harvest of Limniona and Xinomavros to preserve the aromas in the still wine. Second fermentation in a closed tank (cuvee close) is applied for the final product.
Food Pairing
Tasting notes: Light rosé color and persistent bubbles with a distinctive exotic fruit character. In the mouth there is a complex aromatic character and refreshing acidity, which is perfectly balanced by subtle sweetness and a long and fruity aftertaste. Aging potential: To be consumed in 1-2 years.
