Description
“Indolente Rosso” is the perfect example of Cannonau di Sardegna DOC. Intense ruby red with purple reflections, it has a fine aromatic scent of red fruits such as blackberries and cherries, which alternate with spicy and herbal notes of wild thyme and leather, typical of the grape variety. In the mouth the wine is soft and pleasant. It has a pretty good acidity and the fruity aromas come through nicely. On the finish the spice comes into its own, with notes of tobacco and black pepper.

Harvest Notes
Manual harvesting, in the second or third decade of September.
Vinification
Cooling of the harvested grapes through the use of cold rooms. Bunch sorting, soft stripping, grape selection. Fermentation and maceration in steel for about 15 days at a temperature of 24 ° C. 12 months in stainless steel barrel with one month of unrest on the lees. Further refining in the bottle during 6 months.
Food Pairing
Due to its slightly lighter, fruity-spicy nature, the Indolent is a nice companion for grilled meat in summer, as well as with pasta dishes in winter. It goes well even with lighter types of meat, such as pork, with semi-aged and aged cheeses, also combined with fruity sauces.
